Unsuccessful 101: Clean Eating Peanut Tahini Pasta



After a trying 1.5 mile run, I was really looking forward to this one. Peanut, chicken, tomatoes, PASTA.. what’s not to like right? I’ll tell you, the proportions… Apparently Tiffany from the Gracious Pantry really likes peanut butter!

This isn’t all together a travesty though..I think with some monkeying this can work out to be a tasty dish for those who don’t want to all together bathe in peanut butter.. But it might be a while before I return to this sticky mess… *sigh* they can’t all be miracles in a pan!

Ingredients
Pasta Portion
4 chicken breasts, chopped into 1/2” cubes or smaller
1 teaspoon oil
1/2 cup chicken broth

8 oz (1/2 package) whole wheat spaghetti noodles
16 oz (1 package) frozen spinach
16 oz. package cherry tomatoes, halved

Sauce Portion
1/2 cup peanut butter (make sure its clean!)
8 oz Tahini (we found it in the Indian section)
1 cup skim milk

Instructions
            Saucepan (medium)
1.       Cook chicken in oil and broth, you can leave the oil out if you don’t think its necessary

Pot (small/medium)
2.       Cook noodles

Microwave safe container/ Pot (small)
3.       Heat up spinach (we used microwave, way easier and one less pot to clean)

Bowl (large)
4.       Mix together sauce
5.       Combine all ingredients
