You know those days that you just need pizza? For me, this is an everyday craving… I can’t get enough of the cheesy, oozing, bready, pepperoni-covered goodness! But, as one would expect.. something that tasty sounding isn’t always that good for you.
Lucky for me there are pioneers like Tiffany at the Gracious Pantry who came up with a fabulous dough recipe for moments just like this! It’s delicious! Granted, I would literally eat anything masquerading as pizza, this is a home run! I didn’t feel like grinding up flax seeds so I excluded them in my version and also halved the garlic powder… I want to talk to people tomorrow!!
I made two pizzas! One is all veggies (mushrooms, squash, zucchini, onion) and pepperoni (whattttt) on tomato sauce (canned tomato sauce + a few spices). The second is a little less "clean"... fig jam, goat cheese topped post cooking with arugula! A girl's got to spoil herself sometimes.... You know whats funny though.. after the sugar free challenge.. eating such a sweet pizza didn't have the same effect.. odd how you can train your tastebuds isn't it?
(Yes, I know i need a pizza blade... all in good time people.. all in good time)
Ingredients
× 2 ¼ teaspoon active dry yeast
× 1 cup warm water
× 2 cups whole wheat pastry flour
× 1 teaspoon salt
× 1 tablespoon honey
× ½ tablespoon basil
× ½ tablespoon oregano
× ½ tablespoon parsley
× 1 tablespoon garlic powder
Major Instruments
× Large bowl
× Kitchen towel
× Baking sheet
Instructions
1. Preheat oven to 350 degrees
2. Combine yeast and water. Stir and let sit for a few minutes.
3. Add remainder of ingredients. Feel free to adlib, I never measure correctly! That’s half the fun!
4. “Kneed” mixture until it stiffens… Mine didn’t end up very close to a doughy-consistency… looser than that… but that’s ok! It still cooked into fabulous deliciosity!
5. After kneeding, cover with a towel and let sit for 10-15 minutes. You’ll know when its ready
6. Spray your sheet with non-stick and spread the dough out to the sides
7. Bake for 10-15 minutes, until stiff but not brown
8. Remove from the oven, add toppings, and return to oven!
9. Cook for 10-25 minutes, depending on your toppings (FOR Example! Veggies take longer than plain cheese because they actually cook…)
