Well after the success of the Turkey Panini, I figured we would have another relaxed but delicious dinner this past Monday (and subsequent delicious lunch Tuesday) and do another Panini. After crusing the internet for inspiration I decided to combine a few recipes I saw, but put a little twist. It's not exactly "clean eating" but its better than a lot of alternatives! Just trusty ol' fashioned good eats :)
I’ll keep this post short since I’ve already gushed about the grill pan and it’s wondrous and numerous uses… But seriously, it doesn’t get much better, much easier, and much more delicious for 5 minutes of effort… than this.
Ingredients
× 1 whole wheat roll
× 1 bundle fresh asparagus (the thinner the better)
× Drizzle grapeseed oil
× 1.5 slice prosciutto
× 1 slice muenster cheese
Major Instruments
× Grill pan
× Flat pan lid
Instructions
1. Preheat your grill pan on medium
2. Drizzle your grapeseed oil on the pan and be sure to shake it out to all the corners. Add asparagus and a pinch of sea salt – grill until just tender (but not mushy!)
3. Slice bread in half on its longest axis
4. Load up the bread with prosciutto and cheese. Add grilled asparagus straight from the grill pan to the sandwich - then close!
5. TURN DOWN YOUR GRILL PAN to a medium low. Its very hot right now, and it has been proven that if you skip this step, you will have brunt bread :P
6. Place sandwiches on the grill pan and smoosh for a few seconds every minute or so with the pan lid… it will flatten out
Delicious! See? Even Chili got jazzed about it and wanted to eat some!
